There's a thread specifically for this topic I wrote a list of the watching order of Fate series. Stay Night will spoil you the ending of Zero. Also, Zero explain much better the Holy Grail War. The world has really became a terrible place to live in, there's nothing better than the anime world to forget about everything. I started watching "all" fate-related anime based on publishing date so Then, it's up to you if you want to watch Stay Night because it's a mix of events from the three routes and finally, UBW.

It really doesn't matter. I agonized over this question for the longest time, worrying about starting at the "right" place. Eventually, I got tired of that, so I just picked one and jumped in. As it turned out, I was worried for nothing. If you find it too dull to continue, I recommend giving one of the other two a shot. It's a lot more engaging because you don't really know what will happen next. I also watched Zero first and I'm so glad that I did, because now it's one of my favourite series ever. The best option is to watch neither of those. You should avoid fate entirely instead, that's the better option, but if you must watch one then go with Zero. Save the best Zero for last. UBW was underwhelming,being an eyecandy saved it. Zero first and then the route of stay night taht you prefer.
