To bake cucumbers in the oven, first cut your cucumbers in half lengthwise, then scoop out the seeds with a spoon.
Cut the halves into lengthwise strips. This will help them keep their shape while baking. After a half-hour, rinse the cucumbers under cool water and pat them dry with a paper towel. Spread them out on a baking dish, then put them in a degree oven for 1 hour.
Make sure to stir the cucumber strips every 20 minutes so they cook evenly. You can also fry cucumber slices on the stove. After letting them soak in salt, rinse and dry them, then put them in a frying pan with 1 tablespoon of cooking oil. Sautee them over medium heat for minutes. Starting with one half of the cucumber, scoop out all of the flesh and seeds with the spoon until the center of that half is completely carved out. Repeat on the other half of the cucumber. Cut the cucumber halves into lengthwise strips using the knife. Toss the cucumbers and salt with a spoon. The salt will prevent the cucumbers from being too watery. I had made pickles with the yellow cucumbers today b4 I saw your recipes, will check the vines and try recipes tomorrow. My Kabocha did not survive, too much rain but I have a huge Thai Rai on the vine,first time growing this. The stepladder is to prevent the pumpkin from falling off.
